Our Brewing Spirit

"Sake is not produced; it is raised." Since the brewery was founded, we have worked under this motto. We are brewing and raising sake in the faithful way:

—Using the core of round and white rice suitable for brewing sake such as Yamadanishiki, said to be the "king of sakamai (sake rice)"
—Steaming rice strongly for a long time by Hakushika's traditional methods
—Carrying out fermentation using Miyamizu, underflow water from the Rokko Mountains
—Inspecting from materials to products thoroughly, uncompromising on quality control

The progressive spirit has supported Hakushika's sake brewing and we have devoted our passions and skills in each time to raising sake. Although the tools have changed with the times, the same traditional methods and experiences cultivated for more than 340 years have not changed. Our aim as an old and establishment producer of sake has been to provide more and more a lot of customers with Japanese sake that has been created in the true method with the progressive spirit.

Rokko Brewery

The Rokko brewery has been completed in 1993. Its name is taken from the Rokko Mountains and our product's name "Rokkonen (six light-years)." It is equipped with the latest computerized brewing system which enables to produce high quality sake stably and there is also the outfit for handmade. Hakushika's traditional taste lives on ceaselessly with the latest technology at the Rokko Brewery.
